This past weekend we did a bit of shopping, and I found the most awesome Wilton Valentine’s Day whoopie pie pan at Michaels.
I decided to grab it while I could (with a coupon, of course, because Michaels is awesome like that), and I knew just the recipe to make with it….my grandma’s famous chocolate cookies.
So, maybe they’re not really famous, but they are well-loved by our family. This recipe has been passed down from generation to generation. Enjoy!
Ingredients
- 1/2 cup butter or margarine
- 1 cup sugar
- 1/2 tsp vanilla
- 1 egg
- 1/2 cup sweet milk
- 1 1/2 cups flour
- 1 tsp baking powder
- 3 level tbsp cocoa
- 1/2 tsp salt
Instructions
Cream butter and sugar. Add egg and vanilla, mixing well. Sift all dry ingredients together. Stir into creamed mixture alternately with milk, beginning and ending with dry ingredients. If batter is too thin, you may add more flour. Be sure whoopie pan is well greased. Drop 1-2 teaspoonfuls into each heart, and smooth out. Bake at 350 degrees for 10 to 12 minutes. Put together with good icing.
I make a simple icing with a bit of butter, vanilla, almond extract, milk, and powdered sugar. However, my great grandma, who came to Missouri by covered wagon in 1905, used a cooked icing she made with the following ingredients: 1 cup sugar, 1 or 2 tbsp butter, 1 tsp vanilla, a dash of salt, and enough cream to set this mixture. She would cook to softball stage and ice cookies on underside, putting together two cookies like a sandwich. Work quickly as this icing sets up fast.
