Sweet Apple-Lemon Honey Roasted Chicken Recipe

A whole chicken can go a long way with a family of 4, so it’s usually one of my favorite meals to make because I know that we can get at least 1-2 more meals out of it. A few years ago, I watched an interesting episode of Oprah; Cristina Ferrare was on the show, giving ideas for easy chicken dinners. Cristina shared her recipe for Roasted Chicken, and she stuffed the chicken with lemon rinds and herbs. Of course, I tried her recipe, and it was delicious; but I’ve since come up with my own way to make a honey roasted chicken. First you want to remove the giblets from your chicken, and then rinse the chicken well. Place your chicken, breast side up, in a baking or roasting pan.Place chicken in baking pan Next you’ll need at least 1 apple and 1-2 lemons. lemons and apple for chickenSlice the apple and lemons up into moderate slices. Slice up apples and lemonsWhen ready, stuff the chicken with as many apple and lemon slices as will fit. You can tie the legs together when done, but I usually don’t. The fruit really gives the chicken a good flavor, and it makes the chicken nice and moist when cooked. Stuff chicken with apple and lemon slicesNow take a bit of sea salt, and sprinkle lightly over the chicken. Sprinkle sea salt on chickenLastly, brush about 1/4 cup of honey onto the chicken, covering well. Brush honey on chickenThough I didn’t do this next step, I’d recommend brushing with another 1/4 cup honey halfway through baking. You can also add a bit of water to the bottom of the pan, but it’s optional; the chicken will have plenty of juices.Whole chicken stuffed and ready to bake

Bake the chicken in a moderate oven, about 350°, for about an hour. The chicken may take longer to cook, so be sure to use a meat thermometer to check the temperature; the chicken should reach a temperature of at least 165°.

When chicken is fully cooked, slice and serve with delicious sides like mashed potatoes and green beans. Ingredients

  • 1 whole chicken
  • 1 apple, sliced
  • 1-2 lemons, sliced
  • 1-2 tsp sea salt
  • 1/4-1/2 cup honey

Instructions

I'd also recommend brushing with honey again, halfway through baking.
