Cinnamon Sweetness with Snickerdoodles {Recipe Box}

Grandma used to make the best Snickerdoodles…. they may have been the dessert she was most famous for, at least in our eyes. They were melt-in-your mouth sweetness. As I was browsing through her old edition of the Betty Crocker’s Cookbook, I found the recipe with all of her notes beside it.A printable recipe is below, for your convenience. Once the cookie dough is mixed up, though, it’s time to roll spoonfuls of it into dough balls and dip it in a cinnamon/sugar mixture. They go in the oven for about 8-10 minutes, depending on how chewy or crispy you prefer your Snickerdoodles to be…. let them cool, and enjoy!

Snickerdoodles

Ingredients

  • 1/2 cup butter or margarine, softened
  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 3/4 cups flour
  • 2 tsp cream of tartar
  • 1 tsp soda
  • 1/4 tsp salt
  • 2 tbsp sugar
  • 2 tsp cinnamon

Instructions

Heat oven to 400 degrees. Mix butter, shortening, sugar, and the eggs. Blend in flour, cream of tartar, soda, and salt. Shape dough by rounded teaspoonfuls into balls.

Mix 2 tablespoons sugar and the cinnamon, and roll dough balls in mixture. Place about 2 inches apart on ungreased baking sheet. Bake for 8-10 minutes or until done. Remove from baking sheet, and let cool. Most of all, enjoy!

Shepherd’s Pie {Recipe Box}

This is a meal that can be enjoyed any time of the year, but I especially love to make this around St. Patrick’s Day. It’s a slightly different twist on Shepherd’s Pie but one that hopefully, your family will enjoy.A printable recipe without photos is included below for your convenience, but just to show you how we put our pie together….

We use a 13″x9″ pan, and I start with a layer of sloppy joe mixture (ground beef & Manwich this time; sometimes we make up our own sauce). We then add a layer of either whole corn or creamed corn (creamed corn this time). Next is a layer of mashed potatoes. Finally, we add the cheese as our top layer. Then we stick it in the oven for just a bit, and voila, we have a delicious Shepherd’s Pie. Enjoy!

Shepherd’s Pie

Ingredients

  • 1-2 lbs. ground beef
  • 1 can Manwich (or make your own sloppy joe sauce)
  • 1 can creamed or whole corn
  • 4-6 potatoes, mashed to perfection with a bit of butter and milk
  • 1-1/2 cups shredded cheese
  • Salt & Pepper, to taste

Instructions

Brown ground beef well in a skillet, and drain. Add sloppy joe sauce, and mix well. Add as first layer to bottom of 13x9 pan.

Next, add a layer of corn, creamed or whole. Then add layer of mashed potatoes, and finally, a layer of shredded cheese.

Bake in 350 degree oven for around 20-30 minutes, or until warmed through. Serve and enjoy!
