When I was a kid, I remember getting school lunches every once in awhile, and we’d have what we called mini pizzas on hamburger buns. They were one of my favorite lunches. Now that I have kids, I love to make this type of meal for my boys; only, I’d never thought of replacing hamburger buns with English Muffins…. until I was introduced to Bays English Muffins. Oh my goodness, why had I never thought of this? Let me tell you, these English Muffins make the perfect pizza crust; they’re the perfect blend of soft and crunchy.
We received an entire case of Bays English muffins to try out, and we’ve been eating them for breakfast, lunch, and dinner…. we make bacon, egg, and cheese; mini pizzas; turkey and cheese sandwiches; etc. They are absolutely delicious. With ingredients like whole milk, pure cane sugar, potato flour, and butter, the Original flavor are low in fat, 2 grams. They are so soft and have a really delicious flavor to them.
Mini pizzas with Bays English Muffins really are a great way to create a quick, easy, simple lunch for me and my guys; plus, with one English Muffin split in two, each of us can enjoy 2 mini pizzas.

There are just a few ingredients needed to make a quick, homemade sauce. I combined crushed tomatoes, chopped zucchini/squash mixture, and a few seasonings like garlic, McCormick Salad Supreme, salt, and a bit of brown sugar.
Then I spooned the sauce onto each halved English Muffin.
After the sauce, I added a good amount of real bacon bits to each pizza.
Next came the shredded cheese.
Finally, I topped each mini pizza with fresh, chopped tomatoes.
We cooked them in the oven for about 15-20 minutes, long enough for the English Muffins to brown and warm and for the cheese to melt.
They have been a huge hit with both Dan and the boys, so hopefully, your family will enjoy them too!
Ingredients
- 1 package Bays English Muffins, each muffin halved
- 1 can crushed tomatoes
- 1/2-3/4 cup chopped zucchini/squash mixture
- Garlic seasoning
- McCormick Salad Supreme
- Salt & Pepper, to taste
- Brown sugar, to taste
- 1/2 cup real bacon bits
- 1 cup shredded cheese
- 1 cup chopped, fresh tomatoes
Instructions
Make a homemade sauce by first combining your can of crushed tomatoes with the garlic, Salad Supreme, salt/pepper, and brown sugar. Let warm on stove, simmering until the taste is what you're looking for. We love a good, flavorful sauce that also has a hint of sweetness to it.
When your sauce is done, spoon onto each halved English Muffin. Then add bacon bits to each pizza, as well as cheese. Top with fresh tomatoes.
Bake on cookie sheet in a 400 degree oven for about 15-20 minutes, until the English Muffins have browned somewhat and the cheese has melted. Serve while warm, and enjoy!
